I started fishing 2 to 3 years ago, and always seem to brain the salmon.
I found that if bled right, filleted and dried on an absorbent towel, they are a good fish to eat (better when spiced up).
After some experiments I found that diced up into a Tom Yum soup, it's superb.

However, a few months ago I got a smoker...........wow.
Now my salmon get divided up into 1/Bait, 2/smoker 3/the odd one fresh for my cats.

I've only tried the salmon smoked so far, and Im keen to try other species. Havn't tried it with gummy or snapper yet, as there too delish by themselves.

What brand smoker? Can you smoke Aust salmon?

Australian salmon are the one's I smoke, yum. Need to brine them well first in salt water with a dash of your favorite herb or spice. Leave sit fully covered for 1 to 3 days. Remove and alow to drain. Then smoke em'.

Grant, I usually have a batch going, so next time I'll bring some along for a snack.
